How do I choose my brasero?

There are different types of braseros, each with its own characteristics. We reveal the criteria to consider in order to make the right choice..

Question #1 – what is the thickness of the plancha / griddle?

What thickness of griddle is needed for a high-performance plancha?​

The plancha is the centerpiece of your fire pit, and that's why at COEO we've chosen a 10mm thick griddle / plancha.

After interviewing numerous restaurant professionals, we made two major observations:

  • Below 10mm: the griddle may warp under the effect of heat;
  • Above 10mm: the griddle is more difficult to heat. The heat retention is too high. For example, according to many event professionals, 12mm thick griddles are often far too slow to heat up and require a lot of fuel for ignition and reaching temperature.

Question #2 – does my griddle have a peripheral  edge - rim?

Beware of braseros with external edges on the griddle!

Our griddle is inclined from the manufacturing process, so as to have a perfect flow of grease in the direction of the inclination of the griddle.

Why is a raised edge on a griddle not recommended?

– User safety: risk of injury during handling. More dangerous than a griddle without a rim

– Hygiene: risk of difficult-to-remove food deposits

– Design: materials used for welding are not recommended for food contact use


Question #3 – is the plancha inclined from its manufacture?

How is our griddle made?

Your brasero is primarily a cooking tool, so it is essential to carefully consider the drainage of fats. This should be taken into account from the very process of manufacturing the brazier!

Note – A good tilt of the plancha is not a tilt that occurs solely under the effect of heat. Your plancha should also be tilted when cold from the moment of its manufacture.

How can I tell if my plancha is tilted from the manufacturing process?

Position a level on the plancha and check that there is indeed a slope between the outer end and the inner end (centre of the brasero of the firebowl).



Question #4 – how does the airflow occur?
Airflow and draft

A brasero is like a fireplace; it needs a good supply of oxygen to function properly. Air cannot enter the brasero solely from the top. It must rise upwards, feeding the fire from the bottom up.

At COEO, the airflow passes through the double wall of the shelf support and rises into the firebox. This allows for a continuous and optimized supply of air to the firebox.

Be aware that a fire poorly supplied with oxygen has many disadvantages, including:

– Ignition difficulties

– Difficulties in maintaining the hearth at heating temperature

– Annoying fumes


Question #5 – are laboratory sessions carried out?
Compliance with standards and safety

In France, within the European Union and abroad, specific standards govern the design and use of cooking tools such as braseros.

Some brands and manufacturers bypass these tests and market products without having the certainty that they can be used as cooking tools.

We took the time to conduct tests on the materials we use to ensure that they are compliant for food contact use.

Similarly, we have also developed rigorous specifications to ensure that our products pass all the required fire prevention tests.


Question #6 – Which material to choose?

Be careful, if you choose a powder-coated fire pit, it is important to check 2 points:

– Is the paint used heat resistant?

– Is a surface treatment carried out before powder coating?


Question #7 – Which design to choose?

A sleek design is the secret to longevity! No ash or draft doors...

We have eliminated any draft vents or ash traps from our design! These features are not durable and do not withstand the test of time. Indeed, any steel component that reaches high temperatures is likely to warp. These vents and drawers always end up not being used or are removed because they disrupt the proper functioning of the brasero!

Prefer a round fire pit to a square one!

The choice of the size of the plancha for the brasero depends on the use you wish to make of it and the available space. Here are some criteria to help you choose:

1. Brasero diameter 98 cm (larger):

• Larger surface: a 98 cm fire pit will provide a larger heating area, ideal for group gatherings or for warming a larger outdoor space.

• More capacity: It will be able to hold more wood or coal, thus allowing for a longer burning time.

• Required space: It requires a larger outdoor space to be used comfortably.

2. Brasero diameter 82 cm (smaller):

• More compact: an 82 cm fire pit is more suitable for a small garden, terrace, or balcony. It is easier to move and will take up less space.

• More moderate heating: it will be sufficient for small gatherings or more intimate moments around the fire.

• Less consumption: It will burn less fuel, which can be an advantage if you want more occasional use.

In summary:

• If you have a large outdoor space and want more intense heating for a group, choose the 98 cm model.

• If your space is smaller or if you prefer something more manageable and suitable for small gatherings, the 82 cm fire pit would be more appropriate.

  A brasero plate / plancha should not be less than 10mm thick. Below this thickness, your brasero may warp over time.
