- 1 boneless pork shoulder (about 1.5 to 2 kg)
- 4 cloves of garlic, chopped
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fennel, chopped
- Salt and pepper

The steps
Step 1: light the brasero
In a bowl, mix the garlic, rosemary, fennel, salt, pepper, and a drizzle of olive oil along with the chimichurri rub.
Step 2: prepare
Mix the soy sauces in a mixing bowl.
Pour the sesame into another mixing bowl.
Cut the tuna into long thick slices of about 3cm. Dip the pieces of tuna in the soy sauces. Roll the pieces of tuna in the sesame to coat them completely..
Step 3: cooking on the braai
Brush oil on the plancha of the TRIO brasero. Sear the tuna on all sides for about 2 minutes per side. Slice. Serve.
