Equipment
Ingredients
For the fruit topping:
- 500 g of fruit of your choice (apples, pears, berries, or a mix)
- 50 g of sugar (adjust according to the acidity of the fruit)
- 1 tablespoon of lemon juice
- 1/2 teaspoon of cinnamon (optional)
For the crumble mixture:
- 150 g of flour
- 100 g of cold butter, diced
- 100 g of sugar (caster sugar or brown sugar)
- 1 pinch of salt
- 50 g of chopped almonds or hazelnuts (optional, for extra crunch)
The steps
Step 1: preparation of the fruit
If you are using apples or pears, peel them, remove the seeds and cut them into small pieces. If you are using red fruits (strawberries, raspberries, etc.), just wash them and cut them if necessary.
Step 2: season the fruits
In a large bowl, mix the fruits with the sugar, lemon juice and cinnamon if you like this spice. Arrange the fruit mixture in a cast iron pan.
Step 3: preparing the crumble
- Make the crumble mixture: In a large bowl, mix the flour, sugar and salt. Add the cold butter cubes and work the mixture with your fingertips until you achieve a sandy texture. You can also use a mixer or food processor for this step.
- Add dried fruits (optional): If you wish, incorporate chopped almonds or hazelnuts to add crunch.
- Cover the fruits: Evenly distribute the crumble mixture over the fruits in the dish, trying to cover the entire surface well.
Step 4: cooking
- Preheat the Kamado: Prepare your Kamado for indirect cooking (with the 2 half-moon deflectors), maintaining a temperature of about 180-200°C (350-400°F).
- Cooking the crumble: Place the crumble dish directly in the QUATRO. Let it cook for about 30 to 40 minutes, until the top is nicely golden and crispy and the fruits are slightly bubbling at the edges.
- Tips :
- You can add spices like vanilla or grated ginger to personalise the flavour.
- If you want a more indulgent crumble, you can add a bit of chopped chocolate to the crumble mixture or between the layers of fruit.
Step 5 : finition and service
- Leave to cool slightly: Allow the crumble to rest for a few minutes before serving. This allows the fruit to stabilise and the crumble to harden slightly.
- Serve: Enjoy warm, accompanied by a scoop of vanilla ice cream, whipped cream, or a dollop of crème fraîche for even more indulgence.
