The deflectors in a kamado play an essential role: they transform the direct heat of the embers into indirect heat, thus allowing you to cook, smoke or roast without burning the food.​

Here is their detailed function:

Indirect cooking: the deflector acts as a thermal barrier between the coals and the food.

It distributes heat evenly inside the kamado, creating a convection oven effect.

• Cook a roast, a whole chicken, or a rib of beef,

• Smoke slowly at a low temperature.

• Cook bread, pizzas or vegetables without direct flame.

Temperature control: thanks to the deflector, the heat is stabilized and easier to control.

It avoids temperature spikes and helps maintain a gentle and even heat, essential for long cooking times (low & slow).

Food protection: the deflector prevents grease from dripping directly onto the coals, thus reducing sudden flames and acrid smoke.

The result: cleaner, healthier cooking and better-controlled aromas.

Versatility: our deflectors are made of thick ceramic (between 1.5 and 2cm), sometimes divided into two parts to allow semi-direct, semi-indirect cooking — perfect for searing on one side and simmering on the other.
