- Ceramic baking stone and pizza deflector - Ø25cm

Transform your QUATRO M kamado into a true pizza oven and a versatile cooking station with this high-performance refractory ceramic stone specially developed for high-temperature cooking, indirect cooking, smoking, and low-temperature preparations. Thanks to its exceptional ability to accumulate and then gradually release heat, it ensures an even temperature distribution throughout the kamado to achieve precise, consistent cooking results worthy of the best professional ovens.
A DOUBLE FUNCTION: PIZZA STONE AND HEAT DEFLECTOR
PIZZA STONE FOR KAMADO
Used as a baking stone, this ceramic stone allows you to cook pizzas directly on a heated surface that replicates the cooking conditions of a traditional oven. The heat is evenly distributed across the entire surface of the stone, promoting uniform cooking of the dough and resulting in a crispy base, a light crumb, and optimal flavour development. It is ideal for preparing Neapolitan pizzas, artisanal pizzas, homemade bread, baguettes, focaccias, fougasses, tarts flambées, pastries, and baked goods that require perfectly controlled cooking.
DEFLECTOR FOR INDIRECT COOKING
Placed between the coals and the food, the stone acts as a thermal deflector by creating a barrier that blocks direct heat. This configuration transforms your QUATRO M kamado into a true convection oven and allows for particularly consistent indirect cooking while limiting the risk of burning food exposed to the direct radiation of the coals. This use is particularly recommended for long cooking, roasts, whole poultry, fish, vegetables, as well as all American barbecue-style preparations.
INCLUDED IN THE SPLIT & MIX MEDIUM SYSTEM
This pizza stone and deflector is supplied as standard with the Split & Mix Medium system of the kamado QUATRO M. This multi-level cooking system has been designed to maximise the versatility of the barbecue by allowing different cooking techniques to be combined simultaneously within the same appliance. Thanks to this modularity, it becomes possible to combine direct cooking, indirect cooking, low-temperature cooking, and multi-level cooking in order to prepare several recipes at the same time while maintaining optimal temperature control.
EXCELLENT THERMAL INERTIA FOR PROFESSIONAL RESULTS
The refractory ceramic used in the manufacture of this stone has a very high thermal inertia, allowing it to store a large amount of heat and then release it gradually and evenly throughout the cooking process. This technical characteristic provides several major advantages, including better temperature stability, a reduction in thermal variations inside the kamado, more even cooking of food, and a significant improvement in the crispiness of pizza dough and artisan breads.
IDEAL FOR SMOKING AND LOW & SLOW COOKING
American barbecue enthusiasts will particularly appreciate this stone when used as a deflector during "Low & Slow" cooking. By keeping food away from direct heat, it helps maintain stable temperatures for several hours and promotes even smoking throughout the cooking process. This configuration is perfectly suited for preparing pulled pork, brisket, ribs, pork shoulders, whole poultry, and all recipes requiring slow cooking to preserve the tenderness, juices, and natural flavours of the food.
BLACK ENAMEL FOR BETTER DURABILITY
The surface of this stone benefits from a high-resistance black enamel that enhances its durability and simplifies its maintenance after each use. This finish effectively protects the cooking surface, facilitates the removal of food residues, and sustainably maintains its aesthetic appearance despite repeated high-temperature uses. Its robust design allows it to withstand the high heat generated in a kamado while ensuring consistent performance over the years.
USAGE PRECAUTIONS
Like any refractory ceramic, this stone must be used with certain precautions to avoid thermal shocks that may cause cracks. It is recommended to install the stone in the kamado before lighting it so that it gradually heats up with the appliance. It is also advisable to avoid placing a cold stone in a hot barbecue, never pour cold water on a hot stone, and allow the ceramic to cool naturally before any handling or cleaning. Adhering to these recommendations significantly extends the lifespan of the stone while preserving all of its thermal qualities.
WHY CHOOSE THIS PIZZA STONE FOR KAMADO QUATRO M?
This pizza stone and ceramic deflector is an essential accessory to fully exploit the performance of your QUATRO M kamado. It allows for cooking crispy pizzas at high temperatures as well as performing indirect cooking, traditional smoking, or long low-temperature recipes with remarkable precision. PREHEATING: A CRUCIAL STEP FOR OPTIMAL PERFORMANCE
As in a professional pizza oven, preheating the stone is essential to achieve even cooking and to sustainably preserve the ceramic. An insufficiently heated stone will not be able to properly retain heat and may produce pizzas with a soggy or undercooked base.
- Always place the stone in the oven, barbecue, kamado, or fire pit before the temperature rises
- Allow the stone to gradually heat up with the cooking device
- Plan for a minimum preheating of 20 to 30 minutes
- For a pizza, a stone temperature between 250°C and 350°C is recommended
- For bread and pastries, a temperature between 220°C and 250°C is ideal
- For indirect cooking in a kamado, gradually preheat before placing the food
IMPORTANT : The thicker the stone and the bulkier the device, the longer the preheating time may be extended to ensure that the heat penetrates perfectly to the heart of the ceramic.
TIPS FOR SUCCESSFUL PIZZAS
- Wait for the stone to be perfectly hot before putting your pizza in the oven
- Use a lightly floured pizza peel to facilitate the transfer
- Avoid excessively wet doughs that may stick to the surface
- Rotate the pizza during cooking if your device has a hotter area
- Carefully monitor the first cooks to adjust the cooking time to your equipment
- Do not overload your pizza with toppings to preserve the crispness of the base
USAGE AS A HEAT DEFLECTOR IN A KAMADO
The stone can also be used as a heat deflector to turn your kamado into a true indirect cooking oven.
- Position the stone between the coals and the cooking grate
- Leave enough space around the stone to allow for the circulation of hot air
- Keep the lid closed as much as possible to maintain a stable temperature
- Use a drip tray for long cooks of fatty meats
- Ideal for indirect cooking between 100°C and 180°C
- Perfect for ribs, pulled pork, brisket, poultry, fish, and roasts
COMMON MISTAKES TO AVOID
Ceramic is very heat resistant but, like any technical material, it must be used correctly to ensure its longevity.
- Never place a cold stone in a device that is already at very high temperature
- Never place a hot stone on a cold or damp surface
- Never pour cold water on a stone that is still hot
- Never immerse the hot stone in water
- Avoid sudden temperature changes
- Do not use the stone if it has a significant crack
- Avoid mechanical shocks, falls and impacts on the edges
- Do not use aggressive metal tools for cleaning
HOW TO AVOID BREAKING THE STONE?
The main causes of breakage are generally related to thermal shocks or mechanical shocks. To sustainably preserve your stone:
- Always increase the temperature gradually
- Allow to cool naturally after use
- Wait for complete cooling before moving the stone
- Handle it with care when storing
- Store it in a dry place and protected from shocks
- Never place a stone coming from a cold room directly into a very hot device
- Avoid any direct contact with water when the stone is still hot
NOTE: Over time, slight cooking marks, discolourations or superficial micro-cracks may appear. These marks are normal on accessories subjected to high temperatures and generally do not affect the performance or safety of the product.
MAINTENANCE AND CLEANING
- Always allow the stone to cool completely before cleaning
- Clean with a soft sponge and warm water
- Avoid abrasive products and harsh detergents
- Remove food residues with a non-metallic spatula if necessary
- Dry thoroughly before storing
- Store the stone in a clean, dry place
A gradual preheating, appropriate use, and the absence of thermal shock are the keys to enjoying your cooking stone for many years, whether in an oven, barbecue, kamado, or fire pit.
